Unforgettable Chocolate Sheet Cake

About the Recipe

This is affectionally called "Gammie Cake." Joshua Eargle's late grandmother Shirley King "Gammie" made this for special occasions. It's the most moist chocolate cake I've ever tasted!

Ingredients

Cake

  • 2 sticks of butter

  • 3 1/2 TBS cocoa

  • 1 cup water

  • 1/2 cup buttermilk

  • 1 1/2 tsp baking soda

  • 1/2 tsp salt

  • 2 eggs (well beaten)

  • 2 cups sugar

  • 2 cups flour

  • 1 tsp vanilla


Frosting

  • 2 sticks butter

  • 3 TBS cocoa

  • 6 TBS buttermilk

  • 1 1/2 to 2 lbs of powdered sugar

  • 1 cup chopped nuts (optional)

  • 1 1/2 tsp vanilla

Preparation

Cake:

Step 1:

Preheat oven to 350. Melt butter, cocoa, and water and bring to a boil in a heavy saucepan.



Step 2:

In a small bowl, using a mixer, beat the buttermilk and soda until it foams.


Step 3:

Place all the dry ingredients into a large bowl then add the wet ingredients and beat well. Pour into a 9x13in pan and bake for 30 to 40 minutes.


(You can pour this into a cookie sheet that has sides on it but it should be about 1 inch high. Then you would only cook it for 20 minutes and the icing should still be able to be poured over it while hot and will serve 24 regular size or 48 party squares).


Frosting:

Step 1:

Bring butter, cocoa, and buttermilk to a boil but do not boil.


Step 2:

Take of stove and beat in powder sugar 1/4 cup at a time and be sure to beat really well. Then beat in vanilla and stir in your nuts, if you choose.


Step 3:

Pour it on hot cake and let it cool completely which the icing will set!
