Straight Winning Chicken Enchiladas

Kay Jolley's iconic enchiladas!

Ingredients

  • 2 Tbsp. butter or margarine

  • 1 medium onion, chopped

  • 2 garlic cloves

  • 1 (4.5-oz.) can chopped green chiles, drained

  • 1 (8-oz.) package cream cheese, cut up and softened

  • 3 1/2 cups chopped cooked chicken breast (or large rotisserie chicken from Costco using only the breast pieces)

  • 10 (8-in.) flour tortillas

  • 16 oz Monterey Jack cheese, shredded

  • 1 3/4 cups whipping cream

Preparation

Step 1

Melt butter in a large skillet over medium heat; add onion, garlic and sauté 5 minutes. Add green chiles; sauté 1 minute.


Step 2

Add cream cheese and chicken: Stir in cream cheese and chicken; cook, stirring constantly, until cream cheese melts. Sprinkle with salt.


Step 3

Spoon 2 to 3 tablespoons chicken mixture down center of each tortilla. Roll up tortillas, and place, seam side down, in a lightly greased 13- x 9-inch baking dish.


Step 4

Sprinkle with Monterey Jack cheese. Drizzle with whipping cream. Bake at 350°F for 45 minutes uncovered.
