Maeve's Sun-Dried Tomato Orzo

  • 3/4 pound ground spicy Italian chicken sausage or ground turkey

  • 1 teaspoon dried oregano

  • 1 teaspoon dried thyme

  • 2 cloves garlic, chopped

  • 1 shallot, chopped

  • 1/2 cup oil-packed sun-dried tomatoes, chopped or tomato paste

  • 4 cups low sodium chicken broth

  • 2 teaspoons dijon mustard

  • 1 pound dry orzo pasta

  • 2 small zucchini, shredded

  • 2 cups fresh baby spinach

  • 1/2 cup heavy cream

  • 1 cup grated parmesan

  • optional fresh basil for garnish


Step 1:

Brown your choice of meat over medium heat. Cook for about 6-7 minutes. Add the next four ingredients and cook for about 3 more minutes. Add in the tomatoes. Cook for about 2 minutes.

Step 2:

Add the chicken broth and mustard and bring to a boil. Add in the next two ingredients, allow them to cook. Stir frequently and cook pasta for about six minutes. Add spinach and stir.

Step 3:

Pour in the heavy cream and add parmesan cheese. Stir until it is smooth. Set aside as you do not want to overcook the pasta. Garnish with fresh basil.
