Low Carb Beef Enchiladas

Podcast Host Kristen Eargle and her mother Kay Jolley create a low carb quick family dinner!

Ingredients

  • 2 or more pounds ground beef

  • 3 TBS Worcestershire sauce

  • 1 yellow onion, diced

  • 2 cloves of minced garlic

  • 1 packet Taco Seasoning

  • 2 TBS Chili Powder

  • 1 tsp Salt

  • 2 cups Enchilada Sauce

  • 8 tortillas (I used Ole Xtreme Wellness High Fiber Carb Friendly Tortilla Wraps)

  • 2 cups Mexican blend cheese

Preparation

Step 1:

Preheat oven to 350 degrees. In a large skillet brown ground beef on medium to high heat. Add Worcestershire sauce. Chop onion and garlic in a food processor together. Add that mixture, taco seasoning, chili powder and salt. Cook until meat is no longer pink. Taste to ensure the beef mixture is seasoned enough. Drain fat from beef and onion mixture.


Step 2:

Pour about 1/2 cup of enchilada sauce into the baking dish to cover the bottom.

Lay tortilla on a flat surface and spoon ground beef mixture down the middle, top with about 1/8 cup of cheese. Roll up tortilla, tucking in one side and leaving one side open. Place, seam side down, in the baking dish. Repeat with remaining tortillas.


Step 3:

Top with remaining enchilada sauce and cheese. Bake for 15-20 minutes.
