About the Recipe
A perfect fall weekend muffin!

Ingredients
1 3/4 cup flour
1 cup sugar
1/2 cup brown sugar
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp clove
2 large eggs
15 oz pumpkin puree
1/2 cup melted coconut oil
1 TBS milk
1 tsp vanilla
Preparation
Step 1:
Preheat oven to 375. In a medium bowl combine the first nine ingredients.
Step 2:
In a small bowl combine the wet ingredients (eggs, pumpkin, melted coconut oil, milk and vanilla). Add wet mixture to the dry mixture. Fold to combine. The batter will be thick.
Step 3:
Line muffin pan with paper cups. Use an ice cream scoop and scoop into the tins. Bake 22-24 minutes or until toothpick inserted into the center comes out clean. Let cool at least 5 minutes before removing from the pan. You can add chocolate chips if desired!
