Ingredients
3 cups flour
1 ½ tsp salt
1 tsp nutmeg
½ tsp cloves
2 tsp baking soda
1 tsp cinnamon
2 cups granulated sugar
1 cup brown sugar
1 cup cooking oil
4 eggs slightly beaten
2 cups of pumpkin (1 can)
½ cup of water
¾ cup nuts (optional)
Preparation
Step 1
Preheat oven to 350. Mix all dry ingredients in a bowl: flour, salt, nutmeg, cloves, baking soda, cinnamon, sugar, and brown sugar.
Step 2
Make a well in the center and add the following: cooking oil, eggs, pumpkin, water, nuts (optional). Stir until well mixed. Pour mixture into 24 muffin cups.
Step 3
Bake at 350°F for 20-25 minutes. Makes 24 muffins.
