Darlene's Mexican Chicken

Podcast Guest Darlene Johnson shares her family's long time favorite dinner.

Ingredients

  • 4 Chicken breasts

  • 6-8 Corn tortillas

  • 1 small can of Ortega chili salsa

  • 1 can of cream of mushroom soup

  • 1 can cream of chicken soup

  • 1 large sour cream (12 – 16 oz.)

  • 1 medium diced onion

  • 1 lb. of grated cheddar cheese

Preparation

Step 1:

Bake 4 Chicken Breasts for 45 minutes. Debone/Skin/Cut into small pieces. Tear 6-8 large Corn Tortillas into big pieces.  


Step 2:

Soup Mix: Combine 1 small can of Ortega chili salsa, 1 can of cream of mushroom soup, 1 can cream of chicken soup, 1 large sour cream (12 – 16 oz.), 1 medium diced onion, and 1 lb. of grated cheddar cheese.


 Step 3:

Layer in a 9x13 pan: 

  1. Soup Mix 

  2. Chicken 

  3. Tortillas 

  4. Cheese 


Layer again! Bake uncovered at 350 degrees for 45 mins.  It should be bubbly.  Let stand for 10 minutes before serving!
