Podcast Guest Britney Shaw shares one of her favorite go to meals.
Ingredients
1lb ground beef
2 taco seasoning packets
2 ranch seasoning packets
2 cans corn
1-2 cans of beans: (choice of chili beans, pinto beans, or kidney beans)
1 can diced tomatoes
1 can mild Rotel diced tomatoes and green chilies
1 TBS garlic powder
1 TBS minced onions
1 TBS Worcestershire sauce
1 tsp pepper
shredded cheese
sour cream
Preparation
Step 1:
In a big pot or crock pot add all of your canned items (make sure to drain the corn) and put on high heat.
Step 2:
Grab a skillet and cook your ground beef (season to your preference). Once the ground beef is cooked, drain and put back in skillet then add both taco seasoning packets (use directions on back of packet- what you would do when making tacos use both packets)
Step 3:
When that has had time to cook and boil then add ground beef to your big pot/crock pot and stir
Step 4:
Add seasonings and minced onions above and mix. Now add both ranch seasoning packets and mix well
Step 5:
Once everything is good and mixed, turn on high and let cook until boiling (if using big pot). When boiling begins I turn the heat down to medium/low and let simmer for 1-2 hours or longer, the longer the better, stir often If using a crock pot, once everything is mixed well, turn it to low and let cook for 4-6 hours or high for 2 hours. After cooking, put in a bowl topped with shredded cheese and sour cream and enjoy!
