Ingredients

Dry Ingredients

  • 2 cups flour

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ½ teaspoon salt


Wet Ingredients

  • 1¼ cups sugar

  • ½ cup butter, melted and cooled, or shortening

  • 2 eggs

  • 1 teaspoon vanilla

  • ¼ cup milk

  • ¼ teaspoon vinegar

  • 2–3 ripe bananas, mashed

Preparation

Step 1:

Preheat oven to 350°F. Grease a loaf pan. In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside.

Step 2:

In a large bowl, mix sugar with melted butter (or shortening) until well combined. Add eggs, one at a time, mixing after each. Stir in vanilla, milk, vinegar, and mashed bananas. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

Step 3:

Pour batter into the prepared loaf pan. Bake for about 35 minutes, or until a toothpick inserted in the center comes out clean. Let cool before slicing.
