Ingredients
Dry Ingredients
2 cups flour
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Wet Ingredients
1¼ cups sugar
½ cup butter, melted and cooled, or shortening
2 eggs
1 teaspoon vanilla
¼ cup milk
¼ teaspoon vinegar
2–3 ripe bananas, mashed
Preparation
Step 1:
Preheat oven to 350°F. Grease a loaf pan. In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside.
Step 2:
In a large bowl, mix sugar with melted butter (or shortening)Â until well combined. Add eggs, one at a time, mixing after each. Stir in vanilla, milk, vinegar, and mashed bananas. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
Step 3:
Pour batter into the prepared loaf pan. Bake for about 35 minutes, or until a toothpick inserted in the center comes out clean. Let cool before slicing.
